It is equipped with an air conditioning system (hot / cold); on request it can be equipped with hatchet poles (to break up the hat during the deléstage), as well as oxygenation and fulling systems.
Naturally favors enlargement and raising of the cap of marc. It allows the crushing and pressing of the pomace in the deléstage phases. It also allows the automatic extraction of exhausted pomace at the end of fermentation and the extraction of grape seeds during the fermentation phase — by washing out — from the lower door.
